Blueberry "Pancakes"

   At home, Sunday mornings mean pancakes so I thought I would try to bring a little bit of that here for Earth. 

   While Earth played (with boxes on the floor at my feet, rather than with his toys in his play space!), I used a package of blueberry muffin mix to make us a breakfast treat.

  Pro tip: always crack your eggs into a secondary container so that if the egg is bad, it doesn't ruin the rest of your ingredients!

We took a little break for some family time:

In the middle of my second batch, I had to switch stoves when the power went out.  I'm very thankful that I'd gotten my butane stove and fuel just this week. I'm also thankful that my mom sent me two hot pads so that I had an extra one to put on the floor so I didn't melt my linoleum (another pro tip for you!)

  So how did the pancakes taste? Earth loved them!  We didn't have any syrup so I just buttered them and let him eat with his fingers.  He at three that day and had the leftovers for breakfast later that week.
