From the Archives: Fudge-y Chocolate Cake for Two
This is the perfect thing if you need a chocolate fix and don't have anything on hand. It's easy to make and fast to cook. The center is cake-y and the outside is fudge-y. We eat it in the bowl with two spoons but you can turn it out onto plates too. When a cousin of D's sent us this recipe, she called it a single cake serving but I think it makes so much cake that we split it in two.
In a microwaveable soup bowl, mix :
4 T. flour
4 T. sugar
2 T. baking cocoa
1 egg
3 T. milk
3 T. oil
3 T. chocolate chips (optional; I chop up two of the little Dove dark chocolates bites )
Small splash of vanilla
Mix ingredients until smooth and microwave for 2:45 minutes at 1000 watts (we do 2:30 in out 1300W microwave). Cool a little and tip out onto a plate if desired. EAT!
